STEEPED IN TRADITION

The distilling process of Irish whiskey in Oak Leaf County is one of the oldest in the world, dating back to the 11th century. It's a process that has remained largely unchanged, and one that is steeped in tradition and care.

LOCALLY SOURCED GRAINS

The process begins with the finest locally sourced grains, which are carefully selected for their quality and flavour. These grains are then mashed, and the resulting liquid is fermented to create the wort.

The wort is then carefully distilled in copper stills, a process that has remained unchanged for centuries. The distillation process is a delicate balance of art and science, where the skill of the master distiller is crucial in creating a whiskey that is rich in flavour and character.

AGED IN OAK BARRELS


The resulting liquid is then aged in oak barrels, which impart their own unique flavour to the whiskey. The barrels are stored in dark and cool warehouses, where the whiskey is left to mature for several years. During this time, the whiskey absorbs the flavours and aromas of the oak, and takes on a deep golden colour.

Old Oak whiskey is sourced from carefully selected whiskey stock and finished using a carefully managed process in a craft distillery just outside Belfast and using what is believed to be some of the purest water in Ireland straight from a 400 foot deep well located on site at the distillery.
